Egusi Soup is another mouth watering Nigerian Food that accompanies various solids such as Èbà or Àmàlà. It is often mistaken for Efo Elegusi but Egusi soup is a standalone soup not requiring any type of leafy green. The leafy green is what sets them apart. Please follow this guideline below to achieve this unmistaken and tasteful Nigerian Soup Recipe.
Ingredients:
· Beef
· Tripe
· Gizzard
· Smoked Turkey
· Dry fish
· Salt
· Aromat seasoning
· Maggi
· Ground Egusi
· Red bell pepper
· Scotch bonnet
· Onion
· Plum tomatoes
· Palm oil
Cooking instructions:
· Soak the dry fish in warm water to soften
· Cook the assorted meat until it is soft and ready to eat
· Blend the bell pepper, plum tomatoes, onion, and scotch bonnet together until smooth
· Heat the palm oil on medium heat, once piping hot; pour the blended pepper and season with salt, maggi and aromat seasoning. Leave to cook for approximately 10mins.
· Pour the ground Egusi into the blender, add small amount of water and blend again to make sure it is smooth.
· Add the blended Egusi into the cooking pepper and gently stir
· After 5mins, add the assorted meat and dry fish and leave to further cook for approximately 5mins and it is ready to serve with any side of your choice. Bon Appetite!
